I recommend using ''Veteran Start'' option because you clearly didn't got to the end of 0.5/0.6 last time and so you don't understand how the new 0.7 content looks like.
There is currently an issue with 0.7 that prevents Sayuri from appearing in sprites gallery, skins and rename menus.
We’ll release a fix update in a few days, once most bugs have been sorted out.
I seem to have solved it! Its default archive folder and previous versions use a directory, which may be caused by archive incompatibility, and can continue normally after deleting the archive. Maybe it should be improved in a targeted way, such as overwriting the previous version of the archive or enabling a new folder?

Please reinstall the game by extracting it into a fresh folder. If you try merging two versions, this is what happens.
Delete the entire old version folder.
Now download the new one, unzip it wherever you like, done.

The rule for Ren’Py games is to never extract a new version into the previous game directory. Always extract the new version into a fresh folder :)
